I recently made pendant lights for my kitchen so I know that Mennards, Lowes, Ikea etc. sell the electric "workings" for the lights. You might be able to keep the glass parts and just use new "workings" to make them longer. Personally, I like a little whimsy in a kitchen so I made my lights to have fun shades. I used a vintage metal collendar for the center and 2 wire baskets for the outer lights. It looks great and I get lots of positive comments. I have also seen mason jars used, vintage jello molds, vases, dishes etc. Check out the internet for ideas! You might be surprised on what you can come with. Good luck!

Oh, I forgot to say that the lights are a bit short for my taste but I bet no one but you really is going to notice this. They will focus on your beautiful counters and kitchen. But if it really bothers you by all means change them! Ikea has a lot of lighting and it is very reasonable. Even the bulbs are cheaper than I see in other stores.
