Hi there,
I usually say it depends on two things, the height of the ceiling & the feeling you want. If the ceiling is heigh, a color can help to warm it & bring it down visually. If the ceiling is 8' you might want it to disappear and feel more open, which is why so many people use white. Just like a landscape, if the elements in a room are darker at the bottom & recede to a lighter tint above, (think dark grass up to a light sky) our eyes are instinctively trained to not pay attention to a white ceiling.
