Formica island?

I am all about re using and recycling. I can purchase a kitchen island countertop that was ordered wrong for next to nothing for our income property. However it is too wide (60 inches). The length is fine. If we rip some width off of it, does anyone have suggestions for covering the raw edge. We could put it on the cabinet side. Or suggestions maybe for reattaching the original beveled edge?

Can you add a stainless steel sheet for moulded edge? The kind of flexible sheet that is put over white appliances to give SS look.
