Cedar siding care?

I have new cedar shake siding in two small areas on my house (a gable and around the front entry). I'd don't want it to go gray. I know the temperature and humidity when a sealing product (either oil-based or water-based) is applied make a difference in how well that product performs over time. I live in Portland OR, the rainy season has begun and night-time temps are in the high 40s-low 50s. So, here are my questions:

- Would it be better to wait until spring to lightly stain & seal the cedar?
- If I do wait, what prep will the cedar need in the spring prior to applying a sealer?
- If I stain/seal now, is there a best product to use for humid and colder conditions?
- generally, what's better, oil-based or water-based products? Brand/particular product recommendations would be welcomed!
