Selecting a granite countertop & backsplash is a very personal task and will be different for every person. Remember to take into consideration what your cabinet color, appliance color and floor color will be and bring them with you (if possible) to go shopping. Selecting granite from slabs is best by visiting a local stone supplier and looking at the slab completely instead of a small sample. I'd also consider if you want a slab that has a lot of movement or you want it fairly consistent. If you're leaning towards consistent, you may want to look at the quartz composites (caesarstone, silestone, etc.) which are made from natural quartz and combined with a man-made resin. They are fabricated the same as granite and are typically similar in price. But the quartz composites have low maintenance and are very consistent.
For what I see so far, without knowing the floor material/color or what color you like, I'd recommend Typhoon Bordeaux. I like countertops that have some movement and a little variety of color. That gives you a great foundation to select your backsplash from.

I will suggest something else. Since you have black appliances, I think the right answer might be a black granite - simple and classic. The greens and reds in the typhoon are very clear color choices in a room - a person who had a blue and white and yellow color scheme wouldn't buy your home. Black would work fine with all color schemes, and I would suggest black matte iron hardware as well - be consistent.

Also, since your kitchen appears to be fairly transitional, I wouldn't buy granite at all - go for one of the dark quartz products - they cost the same as granite but actually perform better - and they are a bit more contemporary / transitional than granite which can come off as traditional.

For resale, black quartz with more modern black pulls will do good things. Or head sort of mushroom brown greige so you can have the oil rubbed bronze - paint the wall a dark brown gray or chocolate - great with oak.
