Get the appliances that best serve your particular cooking style. The appliances are there to help you cook the way you want. Nobody knows that better than you.

I agree with Marilyn. If you have a lot of use for a steam oven (?), then by all means get one. Otherwise, go with induction.

I would go with the steam oven - it is fabulous to cook with and can eliminate a microwave for a more healthy cooking option.... My experiences with Liebherr ref. has been quite impressive and I personally prefer them to a SubZero.... if you like the Liebherr as much as the SubZero ref. then go that route so you can get all the appliance you want! It sounds like that is a good trade off to me.... but you have to sit back and consider why you want each of the items and how is it better than what the alternative would be and then ask yourself..... will I regret not chnging the ref. to get the steam oven, or vice versa? Everyone has some buyer's remorse when building or renovating - it is a huge amount of time and investment....maybe there is somewhere else you can save a little so you can get all the appliances you want - you will be using these every single day so you should enjoy them....it sounds like you did your homework getting facts, features and benefits....
