Well, I'd say find more or better pictures. Deciduous trees like hornbeam are perfectly suitable to twin-trunk styling. I have 6 of them, and they are twin-trunk because that's how they were collected. As for you cutting one of the trunks off...well, you have to make that design decision artistically. Many factors involved there, and without a pic of it, any advice you'll get here is basically mere conjecture.
