Dwarf Schefflara

I just purchased this plant form the Missouri Botanical Gardens. It is a starter plant and is in it's greenhouse plastic pot and I want to repot it. It's pot looks pretty deep for a Bonsai planting. I plan to cut the roots back about 1/3rd and the top growth as well. Does anyone have sugestions for me? Should I just cut the branches back, or do I need to cut some branches right at the trunk? There is a nice bit of moss at the base of the trunk. How do I keep that? It looks like it could be a fast growing plant, how often should I cut back the roots and top growth? Any suggestions would be appreciated, as well as a good book on this plant.
Thanks,
Chris
