Over-wintering various bulb problem

Every year I go through this, but I am determinded to succeed. I'm tired of buying them as annuals each year. I have Peacock Orchids and 2 lonely freesia. They were both removed from their respective pots and placed into a bag with clean dry wood shavings and vermiculite (mold has been my big problem in the past, so I was trying to keep them dry). I've had them in the eaves of my house for about a month, I checked them a couple days ago (I normally don't, but I have exotic seeds coming and everytime I get a new plant I religously inspect everything I currently have) and they were wrinkly and not hard like I assume they should be. Is it normal?

I also have montebretia bulbs (rumor has it they like to be rootbound so I left them in their pot). The montebretia were sprouting, no light, so it's very spindly and pale.

I have an unheated garden/storage building. Would that be enough protection? Should they go back in some dirt? And one last slightly more ridiculous question... would shipping bubble wrap help protect them a little more?

They did beautifully, everyone grew tall and green and healthy, and all flowered; I feel like I owe them *grin*. Can I grow someone indoors? Sorry for the lack of definite temperature, I can have some later (not home), also pictures if requested.
