For a true light gray (without hints of green or blue or any other color) I would recommend Repose Grey from Sherwin Williams or anything it this family:

It will look striking with high gloss white trim.

Can you do high gloss trim on bookshelves?

We use it on the trim out phases of a number of our projects for the doors, cabinets and built-ins. We use the "straight out of the can" Duration trim and door paint from Sherwin Williams. Gloss or High-gloss will really make them pop and our clients tell us that they find it makes them easier to clean.

However, make sure that the wood or material you apply it to is very smooth. If there are any defects or blemishes give them a light sand because they'll stand out more if you don't tend to them prior to finishing them out. I would also recommend using rollers or spraying instead of brushes.
