Jethro, If these were my trees, first of all I would leave at least one Mutsu, they are great apples. I would make use of the scaffolds that are there, grafting to them with a bark graft or cleft graft. Each scaffold branch would nicely accomodate a different variety. Many orchardists have trees with multiple varieties on one tree. I have one with perhaps a dozen varieties on it. It is important to keep them well labeled. I would say it depends how high they are now and what height you are expecting to run your first permanent scaffolds.

It's easiest to just do whip graft to the leader if that won't put you up too high.

If it does, then cut them back to a reasonable location and do either cleft or bark grafting.

You can also do multiple grafts: one to the leader and some to the scaffolds. You can do a single variety or multiple varieties as suggested. I find it hard to keep the trees even unless you choose varieties of equal vigor. Even then I prefer to keep changing the leader and build the tree in "layers" if that is my intent.

Thanks for the replies. I am planning on keeping one Matsu. The other two I wanted to change varieties. I would say the bottom scaffolds are eventually going to be remove (too low, Deer). They are fenced individually know.

I think I may go with cutting back to above the first set of scaffolds and graphed there. I have success with bark graphs taking, the only issues I ever has been with high wind events snapping them off in the first season. Is there a recommended way to say splint the scion the first season?
