That pH is low for grapes. They'd do better at 6 to 7. But 5.5 will probably work.

It doesn't matter how you train the vine the first yr. Just get as much growth as possible. The 2nd yr train the strongest cane up a stake and cut the vine at the top wire. That point on the vine could be called the head of the vine. Every dormant season thereafter you will leave four canes to bear the next summer. Cut out all other canes as close to the head as possible.

Follow that simple plan and you will have fruit every year.
