I looked for this info before & didn't find much about drying eggs at home. Found more that advised against it die to salmonella risks.

I don't know that anyone will "die" from eating dried eggs.

Should you ask anyone old enough to remember Korea or WWII you will learn there were tons of dried eggs and we come to hate them. So, somewhere out there is a procedure. I think you do have to pasturize them. I seem to recall that salmonella is a spore former so just being neat and clean probably is not enough precaution.
