Growing potatoes in soil ?

Seems like a dumb question, but when ever I read about growing potatoes, its all about straw.

I have deep raised beds with very fluffy sandy soil. The bed I am growing potatoes in this year is about 18" deep. I dug holes that were 10-12" deep, and lightly covered the seed potatoes with soil, then have been adding soil as the stalks emerged. At this point the soil is flush, meaning the original potatoes are buried 10-12" deep. And the stalks are about a foot out of the soil.

Is there any reason to continue hilling, or to mulch them?
