composting ornamental grasses

Hi. We have 2 very large ornamental grasses that I'm considering composting (not sure if they're fountain grass, pampas grass etc but in the fall it turns completely brown, stands nearly 5 ft and the stalks/leaves are very abbrasive to the touch). My question is threefold: 1) are they any good for composting ie any significant nutritional value? 2) do the tough stalks, etc break down quickly (I plan to shred)? 3) would this be considered a brown/carbon? I ask the carbon question b/c I have plenty of leaves to mix with it so was looking for something with more nitrogen to offset since I don't have enough kitchen waste to support all the leaves.
