Bareroots planted....protected correctly?

So this was the first bareroot experience, many of you told me what to do. We were "practicing" on 2 Lowe's boxed roses before we plant the real stuff, 3 Austins on Sunday.

After planting we created a little basin for the roses and watered it heavily. Then I mulched around it and up the canes a little, similar to what I would do for winter protection.

The roots on the roses seemed decent and the canes were thick enough but not particularly long. So by the time I mulched the 1 with shorter canes, there was not much sticking out. Is this too much mulch? Also the tops of the canes were not super white looking, is that normal?

What would expectations be, assuming a typical Spring, when one would know if they are growing or not?
