I watched a 3-parts video series on how to prune once-bloomer Old Garden Roses. Recap:

1) prune all the skinniest branches, they won't produce flowers.

2) prune the criss-cross branches to have an open-center for air-flow.

3) prune HARD after blooming for once-bloomer, but lightly in the spring for once-bloomer.

3) for repeat-bloomers: prune hard in spring time: 1/3 for shrubs and 1/2 for hybrid teas and floribundas. I only prune 1/3 for hybrid teas and floribundas since I don't want them so short that the bunnies eat the new growth.

Strawberry gave you great advice. I only tip prune my OGRs now to take off die back and take out dead wood. Otherwise I just leave them alone. Even my moderns seem to prefer less pruning over the more severe pruning that's always been recommended.

At some point in time, the oldest canes will stop producing, and should be pruned out. How long that takes can vary tremendously, depending on the variety, so it isn't a cut and dried number, but you may be coming up on that point in time. Pay attention to how quickly the canes leaf out, and how well they bloom. If they start becoming non-producing, plan on cutting them out next spring.

Aside from that, I'd leave them alone if the object is the most flowers. I usually prune for 'best' flowers, so do cut the roses back.
