Pruning Question

I have several seedlings that have grown to about 7 inches high (from soil level). I am thinking of cutting them back to form a more compact plant and encourage branches. If you do, how do you trim your plants?
1 = pinch off top leaving larger leaves.
2 = cut off half way down forcing it to start new branches with leaves.
3 = same as #2 except about an inch above the caudex.
