I'm thinking about trying parsnip in one of my raised beds this spring to harvest next winter. I've done a little reseach and I'm not sure how parsnip will do in my location. I'm in Talladega County and I'm a little concerned that parsnip may not fare well during our summer. Should I wait until Fall to plant? Any advise or comments will be appreciated. Thanks.
