Bok choy in the spring?

Help, My limited research has shown some people having issues with chineese cabbages bolting in spring plantings. Have any locals experienced this and if so, is there anything that can be done short of switching to fall plantings? I am afraid this is going to be the first of many questions as I try the ropes of gardening in a new state/zone

Birdlady 10 is in Talledega and you might email her as she's lived there for some time but in the country. You can email her from this site.

Well, I planted Pak Choy (baby bok choy) last year and it did well. This year I planted Pak Choy (Botanical interest), Taisai, and "China Choy" (both Seeds of Change) and we are eating on them now with a flood of cabbages coming in the near future. I would recomend them to anyone interested.
