I have been wanting to try this but I wasn't sure about our mild winters as we have so many warm ups then freezes.

There is a forum on GardenWeb that teaches all about winter sowing. I tried it last year for the first time, and had good results. I will be definitely doing it again this year. It is extra fun to me because it's done in the winter time.
