Leeks,dtm, and growing through the summer

I just started some leek seed today so they can be set out with my onion transplants. I was wondering what happens if I leave them in the ground all summer, since that would go way past their day-to-maturity? Would they still be good enough to eat or harvest come October? Or would it be better for me to start another group for fall and winter harvest sometime in summer? The variety is Lancelot, with 95 dtm. Thanks!
