Olives really aren't pickled, they are brined, same thing, only different. You can pickle garlic just like you pickle anything else, but is generally is considered an add in for flavor, not an end in itself. If you want to make garlic stuffed olives, buy the jumbo olives with pimento stuffing and replace the pimento with a clove of garlic. Put the newly stuffed olives back in the brine and let stand for a month or so in the fridge. Should be what you are looking for.
