The problem is spoilage. Sooner or later, the onions will start going slimy and it won't be fun anymore. This time of year, you can stick any green onion in a pot of dirt and it will grow. Whenever you want greens, knife off a plant just below the soil line. In three weeks it will grow back from the roots.

Why not grow a pot of chives on the windowsill?
