Dustin, as soon as the leaves have all dried completely the garlic is cured. Thus usually takes from two to three weeks in most locales.

At that point you can store it. Hardneck varieties should have the leaves trimmed off about an inch above the bulb, and the roots trimmed to only a half inch or so. Softnecks can be treated the same way. Or you can trim the roots and then make braids with them.
