Jay, from what you say, I presume you are using "bunching" in the old-fashioned marketing sense. That is, scallions that you bundle into bunches for sale.

Red Beard, on the other hand, is a true bunching onion. That is, it grows in clumps (i.e., bunches) like chives, with multiple shoots growing from the same root base.

Spliting refers to the fact that the stalks are broken apart for use, or "split," like when you divide perennials. Speaking of which, virtually all bunching onions are perennial, and will form thicking bunches the longer you leave them. In most cases, you don't get a decent bunch until the second year.

Seed-planted Red Beard, which grows to 26", takes 85 days to maturity, and has mild, pungent flavor. The stalks are red, but the red color is stimulated by cold temperatures.

"Sow seeds in spring or fall in rich, loamy soil. Prepare rows 14-20" apart in fertile, well-drained soil. Plant each seed 1/-3/4" deep and 1/2" apart. Mature plants can be harvested in summer or allower to grow through the winter."
