elephant garlic: remove flower stalk?

20 years ago

I grow a lot of regular garlic and snap off the scapes. I only have a few elephant garlic, and don't know if I should also snap off the scape or flower stalk...I'm not sure if it is called a scape since EG is really a leek, I think!

Also, how do I tell when it is ready to harvest? Is it the same as garlic when there are 4-5 leaves remaining that still green?
