We've kept kim chee in the refrig for a few weeks, but I don't know what the maximum time you can keep it -- it usually gets eaten up pretty quick here. It will stink up your refrig, too. Here are some local recipes I found on the web:

Most sources I've come across intimate that it pretty much lasts forever in the fridge, but I'm not sure if I want to believe that - lol!
Hi breezy, I just called Palama Supermarket, our favorite supplier of kim chee, and the owner said you can keep kim chee in the refrig for about a month, then you will notice it going sour. However, sour does NOT mean throw away. She said at that point, to use it in kim chee soup, or kim chee fried rice (my hubby's favorite -- see links I mentioned above for recipes), or even kim chee pancakes, which I've never tried before... she said just use pancake flour and add some green onions, pepper, and whatever else you like. The sourness of fermenting kim chee is actually regarded as MORE tasty to many kim chee lovers, and imparts a "better" flavor to soups, according to the gal I spoke to. Next time you visit Hawaii, if you have time, you might want to visit Palama Supermarket. It's an old hole in the wall place, definitely NOT on tourist agendas, but many kim chee lovers think they sell the best tasting kim chee. And you can sample them too before you buy.
