I have several wild Burdock plants that have sprung up in my yard, & was wondering if there is an optimum time for harvesting the roots?
Right now the plants are only around 3-feet tall & the burrs are still soft & green.
Can the roots be harvested anytime? When the plant matures & the burrs are brown? After the plant is felled by frost?
Many thanks in advance for any advice.

Here is a link that might be useful: Harvesting Burdock
Thanks Violet. I did do a search on it, but couldn't find anything about when to harvest. Your Google search came up with more info.
