Cavendish and Orinoco are good varieties. They both also have dwarfs but I think the taller ones handle heat better. Try to keep them from hard freezes (below 30) because you dont want any die back on the stem which could keep it from fruiting. They can handle at least 15F, but will die back. Plant it in the spring after frost and freezes are over for the winter. late march or early april is probably a good time in your area.

Bananas love water and will need lots of it when temperatures get above 85F. They love the sun, but I think you will need to make sure that it gets shade during the warmest part of the day in your area because temps exceed 100F in the summer.

A plant that is a foot tall might take about 3 or 4 years to fruit, but the non dwarf varieties can grow very tall in a single season when its in the ground, given fertilizer, and established. When a frost comes the leaves will brown, but as long as the main stem of the plant stays firm, new leaves will sprout from the top when warm weather returns.

I think the only thing you will have to worry about is the heat. I've read research that shows that bananas will basically stop growing at very high temps (95-100F or so). I think the key would be to give them some shade and water, water, water, water... I'd use a ton of mulch also.
