You have such a wide variety of chioces, I'd suggest that you do a little homework and find a species that really 'wows' you - don't just settle for the basic green Phyllostachys unless that is what you want. You can choose from thick green, thick gold, thinner gold, gold w/green stripes, grren w/gold stripes, black, mottled, blah blah blah. Go here

look over the photos and see if any 'speak to you'. There would be very few of the Phyllostachys, Pseudosasa, Pleioblatus that you could not grow in your climate - if you are prepared to provide adequate water. I'd suggest that you start by looking at the different Phyllostachys Bambusoides cultivars, as they contain many of the color choices you have.

Look into Semiarundinaria fastuosa, which is sometimes called hedge bamboo because it is rigidly upright and very leafy from the ground up. Here's a link to some photos:

However, I also agree that it's nice to plant more than one kind for both the variety and for the reassurance that, if one species decides to flower, you won't lose the whole planting. (Flowering happens very rarely -- every 20 to 150 years -- but unpredictably.)
