OT -- Green Tomato Pickles

Hi, everyone. I've got a lovely crop of green tomatoes that are never going to ripen before it gets cold. Anyone got a favorite recipe? Thanks in advance!

kaky, This is copied from a garden radio talk show hosts web site whom I rarely agree with, but this receipe is so easy and terrific. It is tastes sooooo much like jam that no one has ever guessed the ingredients. It doesn't use many of your greenies but its worth a try.

You could also put your green maters in a paper bag or wrapped in newspaper and stored in a cool dry place and they will turn red, not as good as the summer but better than the supermarket.

    Aunt Ruth's Raspberry Jam

3 cups green tomatoes finely chopped
    2 Cups Sugar
    1 six-ounce package Raspberry Jell-O

    Preparation

Mix all ingredients. Boil for 20 minutes. Pour into jelly jars.

Rich, can I seal & put the jars in my pantry (like I do other jams) or does this need refrigeration? I've only used pectin before, not jello. This sound yummy and easy. Thanks

I don't know squat about storing foods, but with jell-o being a main ingredient my experience is to keep the jars in the frig. Even then they only last me about a month or so, probably not a good pantry item. Enjoy and let us know what you think.

kaky, I just saw your post and remembered I had a recipe for green tomato muffins you might like to try. I used it only once - about 4 years ago and the kids liked them. They are a little high in oil though, but you can proably substitute apple sauce. The comments are my friend's.

    Green Tomato Muffins (from Loretta)

    3 cups flour
2 cups sugar (I use half the sugar because I don't like too much sweet)
    2 tsp baking powder
    ½ tsp baking soda
    ½ tsp nutmeg
    ½ tsp salt
    1 cup vegetable oil
    3 eggs
2 cups green tomatoes, finely chopped (I use a mini-chopper or blender)
1 cup coconut or nuts (I use powdered almonds)
    2 tsp vanilla essence
    1 cup raisins (optional)

Combine all ingredients, adding tomatoes last.
Bake at 350 degrees until light brown.

I remember they did freeze very well.

Kaky, since you've only received a couple of suggestions here you may want to ask the same question on the tomato forum, I'm sure you'll get a good response there.

My Mom used to make a delicious one called picalilli. I googled it and found many different recipes. Try that.

Thank you all very much for your suggestions! I'm still holding out for a few more to ripen!
