Lesa, This is my 1st time to WS ,too. But, I think that I can help with your question. According to what I've read here, it can be done either way and the jug doesn't have to be air tight. Some WS'ers like to leave them open on the sides to allow more moisture inside. What I've gathered is that it's not critical either way you go.

I'm a first timer as well and I used duct tape because it was easier. I tried the paper punch and twist tie and it takes longer than just slapping on some duct tape. Either way air gets in and circulates and moisture seeps and drips as well. It's really an individual preference--it won't mean the difference between success and failure.

Winter Sowing is meant to be adaptable to the user. Tweak it all as you like and need--that goes for containers, soils, seeds, etc. Look at the basic ideas and tweak them to do it your way.
