You should be able to move them now, especially since you're cutting them back to reshape them. Keep as much of the roots as you can. After they're moved, don't let them dry out but don't overwater in winter. Mine came back from branches that were an inch thick, but in my zone 6, it took until June before I saw the green sprouts. You should see new growth early next season. You may not get flowers for a year or maybe two (really depends on the kind of camellia that you have as well as how far back you have to trim them). But you should be OK. I would feed them lightly when the new growth starts and then maybe again during summer growth period.
