The Texas Gulf Coast Fern Society had the pleasure of presentation by Laura Lee on preparing fiddleheads for the dinner table. She bought ostrich fern fiddle heads from an on-line vendor. The preparation of steeping them in hot water before they were prepared left them pretty bland. Sort of a bland cross between grass and asparagus. She and her friend served fiddle head salad with Italian dressing, a casserole with cheese, but the favorite was dipped in batter and deep fried. Of course here in the south you could deep fry dog food and people would like it. They eat okra here too(yuk). I general, it's OK as a novelty or if you are starving and there's nothing else to eat.

When we visited Alaska, we ate Fiddleheads frequently. The boiled ones with a touch of salt and butter were my favorite! Almost an okra/asparagus flavor.
