Pruning neglected trees

I have recently bought an old Canarian house and the trees are in grave need of attention. I can handle the pests but I'm not sure about pruning which in theory should be done in January here.

We have 3 different types of orange tree, 1 lemon/lime, 1 avocado bearing loads of fruit, 1 guava (I think) and a palm tree, probably ornamental.

The climate is mild here and I'm told citrus trees are very forgiving. We have far more oranges that we could ever eat and I would like to try and prune to make them grow out rather than up. Is this a good idea or not?
