Raspberries I have no first hand info on but blackberries come 2 basic forms; climbing and erect. The climbing (really a better way to say is not self supporting) will need a wire or some support to be tied onto while the erect are as the name self supporting.
Both fruit on second year wood so once a shoot has given you fruit cut it back to ground level.
The climbing should be tied to supports so they run horizontally while the erect type may be 'headed back' to force laterals to grow. That is cut back the main shoot once its about three feet tall and it will send out branches from that main shoot. Like with roses you will get more flowers (and thus berries) from lateral branches than branches growing vertical.
Hmmm mulch well and compost is always a good thing. ;o)
As to IDs thats a hard call. It is very difficult to tell one blackberry from another. I would simply watch for the form and work them accordingly.
