Pawpaws!

Just had my first taste of pawpaw from a local farm and I love them as much as I thought I would! The farmer said that they aren't wild, but a cultivated variety...he wasn't sure which ones though. A few questions...some of the ones I picked aren't fully ripened. Should I leave them outside the fridge to ripen or in the fridge? Also, can I plant the seeds or do cultivated varieties not breed true? The farmer said that I can plant the seeds. Is there a preferred source for trees? I'd like to plant some. Thanks!
