I did harvest apios americana first time this year.
I tried to eat with steam after one month later harvest. The taste is really good. better than sweet photatoes or chestnut. I am wondering why apios and yacon are not popular in North America.Who are growing groundnut or yacon and tried to eat? How about taste?
I want to grow them and planted the Nutty selection from Oikos Tree Crops in October. I think they would be more popular if the tubers were more widely available. Did you grow the native strain?
I have several different kind of apios. Some Asian country plant widely. But most country not popular apios and yacon. Both yacon and apios should be eaten after one month from harvest. Taste is better than sweet yam.
