Fig pruning

I have two figs: A "Desert King" and a "Petite Negra", both in large (26") pots. The Petite Negra is spreading a lot and last year it didn't produce a crop on the old wood, so I'm thinking of doing some pruning on it. Would now be an OK time to prune it up?

Also, last year the Desert King produced a first crop but they really didn't ripen well -- They got large and started to soften as you would expect, but they had no taste at all and the inside wasn't really pink and juicy like usual. It was pretty disappointing. The second crop it produced never got mature enough to ripen before the cold weather came.

I feed both with bone meal in the spring and try to keep the pots well-watered through the summer. Any ideas on what might have contributed to the bad fruit last year?
