I think you should do well with most varieties that are at least a little cold hardy and resistant to humidity. Celeste or Hardy Chicago should do fine. I am a bit to the north of Pembroke. Pembroke is a bit warmer in summer and a bit colder in winter than Wilmington since it is further from the ocean. There are all sorts of figs in the warmer parts of NC.
