I'm in Central Florida and just bought a piece of ginger at the supermarket and planted a piece of it. It basically gets by on mother nature. I don't use it much so when I need a piece I'll just dig some up. Most of the time I forget where I planted it and then am digging to plant something else and come across it. So now I know the basic area and it's mostly shady.

I grow ginger in my earth boxes, very easy, no problems.
Bury it & forget it, when it is needed, unlike Wanda, I just look at my secret ginger planting map and go dig some up. My earth boxes for ginger are also in a mostly shady area. Full morning sun. Shade of the house from noon onwards to nightfall.

I think I got some of this at a swap. Can you use it right after you dig it up or do you let it sit around like a sweet potato?

I use it right away, If you leave it sitting around for any long length of time it will dry up and become useless. I just dig up what I need and cut or break it off the root and leave the rest to keep growing.

Ok, I planted some and did forget about it. I really don't remember where I planted it, but I have a nice ginger plant growing that I 'think' is it. Will it kill me if I eat it and it's not the edible variety? :o)
Is there anyway to tell if it's edible?

I never thought of freezing it and grating what you need. I'm going to plant some.
