You did not mention your climate zone. You did not mention the variety name if it is a common fig not requiring pollination.
You describe good growth (eztra nitrogen fertilizer) eliminating stress as a factor for th problem.
One probable factor that need to be eliminated is to make sure it is a common fig not requiring pollination to continue toward ripening. Figs requieing polination but not pollinated exibited the kind of probllem you described.

The figs are hardy in my zone, desert/Mediterranean climate.
I do not think it needs pollination, it is Syrian black figs that have closed eyes, I'll post images now after I cut come grows to slow it.

Your fig does not have a closed eye,and ,judging by the behivor of your tree,it does need pollination,Sirian or not.!

I went to a nursery to check about the pollination, They showed me the same verity that is bearing fruit normally. I noticed they had it in a pot which had dry soil. The person working there told me that I was probably over watering it. Now I removed all the mulch and I am waiting to see what is going to change.
Oh I bought another verity, Indian type I guess...
Will see how both fare =) Hopefully tasting them soon.

Did the nursery folks tell you it is Indian type?
Fig variteies have names like Celest, Hardy Chicago, Kadota etc etc and a plant in a pot should have its cultivar name ID.

Anyway, good luck with the new plant as well as the other ones.

Hehehe I get them from nurseries that clone figs from fig farms so they are somewhat enhanced to produce more figs. They are a type which is known in a country. In my language we call them by where they come from, Like for example: "Lebanese large yellow fig" or "Syrian large black fig" also "Syrian small sweet figs" ... We ask the qualities like size and seasons then buy them ;).
Maybe after I can harvest my first time I'll post images to ID it from the experts here =).

They sell them when they prune the large figs in their farms wherever they are...
Just to make that clear, They have these verities from ancient times that grew along side humans since thousands of years and have been optimized to the farming style.

If the same variety trees are producing ripe figs for other growers in your area, then it's how you are growing your trees that's preventing your figs from ripening properly. It's a cultural "thing" that prevents you from getting ripe figs. You are not doing the same things that other growers are doing, and you need to find out what that is. Water, sun, heat, fig-wasp pollinators, fertilizers, etc????

Not being familiar with these varieties that are grown in your country, I cannot help with anything specific. Sorry. I wish you good luck and I hope you will find a solution to your problems with your fig trees. Let us know what's going on.
