Identify type of fig please

Could someone tell me the name of this green fig? They never turn brown. How do I know when they are ripe? I'd like to can them, but I'm new to canning. Does anyone have a good link to recipes for canning this variety of fig or other recipes I could use this green fig in. Thanks
