Sowed some Greens today

Sowed some Georgia Collard and some Curly Mustard greens this morning, first time growing greens.

I noticed that the time to havervest for the Collards is 75 days, which would be the end of November just about. Is that too late, I know they are cold tolerant, and we have mild winters here, but Dec seems kinda late to me for growing veggies.

Also, what techniques do y'all use when sowing greens. I just scattered out the seeds in the plot and plant on thinning them out when they sprout. My plots aren't big enough for proper rows, so I thought that would work well.
