process those cukes :)

Two days harvest of my salad cukes. A little fresh dill and home grown garlic. Some coarse sea salt, a pinch of pickling spice and a dash of hot red pepper. A few days (5 to 7) at room temp with the lids ajar, and into the fridge. NY style kosher dills.Yes Sir :)

I'd love to try those, we have not been doing any hot pickling but I'd really like to try some fresh pickling.

It (cold pack & pickling) does require a little attention every day while the jars are outside the fridge. You need to make sure the brine covers the cukes completely (they will move and you need to tighten the lids and move the brine around a minute or so each day); but I think the flavor is hard to beat. Not "Rocket Science", plenty of individual preference in what to add to the brine, how long to let them pickle outside the fridge. Get some smallish salad cukes and experiment. :)
