Mint family hybridizing.

Let me start by saying I really love the Mint family of plants. They are extremely varied, produce a multitude of effects, can be used medicinally, often used in cooking, and many are recreational as well(I don't smoke, but do enjoy mint tea). I am growing several species of mint and salvia, and was wondering about crossbreeding them? I have catnip, chocolate mint, lemon balm, and mint. In the sage department I have pineapple sage, diviner's sage, and am trying to find white sage. Here are a few ideas I've had:

catnip and chocolate mint

catnip and lemon balm

lemon balm and pineapple sage

chocolate mint and pineapple sage

diviner's sage presents a problem, as it has extremely low fertility and seed viability, but I was wondering if this could be countered by crossing it with another species of sage? perhaps pineapple or white sage? if anyone has any experience with this kind of stuff, I would love to hear your two cents.
