Growing beans to eat and dry for maximum production

It is my understanding that beans will produce all season if you keep them picked.

If I want to grow some beans to dry and also like to have some fresh beans. Is the most productive way to let the beans produce all summer and pick them until the last 2 months of the season. And then let it produce a last crop and dry the pods on the plant?

Os is it better to have dedicated plants to produce dry beans and never pick any of the pods until the fall, even if these plants are started in the spring?
