bigoledude, I eat quite a few raw vegetables. The best is whatever your taste buds desire. They have all types of salads, according to what you desire. Even my dog loves most all the raw vegetables from the garden. He will eat most any that I eat but he wants me to prepare it for him.

Most common beans (Phaseolus Vulgaris) have lectins that are poisonous. It is best to avoid eating them raw, especially after the beans have formed in the pods. Kidney beans are the worst that I know of in this respect.

I love sugar snaps off the vine. I also like certain fresh beans off the vine.

I think, from what I understand, the toxicity of beans develop as they mature. I have read that Hyacinth bean are almost poisonous when full mature.

Most beans , in general, should be soaked, the water changed couple of times, even boiled and the water thrown away, THEN added to recipe'. I, myself cannot tolerate dry beans much, because of their bloating effect.
