So I decided to store my crop of bolita beans in 1qt mason jars. I'm pretty new at this, and I don't think I dried them properly first. I went down into my basement earlier today and walked by the jars, and noticed the lids were bulging. So I opened one up and was greeted by a nice pop of gas when I turned the ring. Smelled sort of like beans, but a little off... I took them all out of the jars and they're now sitting in an open paper bag for further drying. I picked out a few beans that didn't look very good, bulging in weird ways and sort of a grey color. The rest look okay, but they were in those jars for nearly two weeks. It does beg the question...
Did I just ruin my entire bolita crop?
