I keep drying them until about the end of the year. If they are dry, you can tap them with a hammer and they will shatter. They won't mush. After they are fully dry they can be stored in plastic bags or jars. After they are dry you can always plant some in potting mix and keep them in a room that is at least 65 F to see if they will sprout. - Dick

All you can do is finish drying them and then do a germination test. To do this, take, say, 10 dry beans and fold them into a damp paper towel. The towel should be wet, but wrung out, so that it isn't dripping wet. Place the folded paper towel into a plastic bag, but leave one end of the bag slightly open, for ventilation. After three or four days you can start checking to see if any sprouted. After two weeks, you should have a final count. Multiply the number of seeds (if you used ten to start with) which sprouted by ten and you will have a germination percentage.

I suspect your beans won't germinate. But you never know. It's worth trying.

Thanks guys, I'll try that germination test once they finish drying. I'm assuming that beans that won't germinate won't be good for eating either?

It's been a few days and they seem fine at the moment, still drying... after what they went through, is there anything should worry about in regards to eating them? I know botulism is a thing with improperly canned foods, would that be a concern here as well?

Botulism shouldn't be a concern. My guess is that you could try eating some and if they taste alright, they'll be alright to eat.
